Whatever Soup

I decided to call this soup whatever soup because I was literally just using whatever vegetables I had in my refrigerator that were going to go bad if I didn’t use them soon. Tonight, this means:

1 Small Yellow Squash

1 Small Zuchninni

1/2 a Yellow Onion

3 Whole stalks of Celery

1 Handful of Baby Carrots

Olive Oil

Vegatable Broth

3 Chicken Tenderloins

Seasoning of your choice (I used cumin, oregano, dried chives, and salt and pepper)

Directions: Boil a pot of water on the stove and poach the chicken breasts until done.Put a splash of  olive oil in the bottom of another pan on medium heat. Chop all of your vegetables. Sautee the onions until they’re near translusent . After you throw the onions in, throw in whatever other vegetables you chose. Let them sautee a few minutes, then add the broth and chick peas. When the chicken is done and cooled shred it with a fork and add it to the pot. Add your spices to the desired taste. Bring to a simmer then lower heat to low and gently simmer for 45 minutes.

    Did you know that if onions are sauteed longer than 5 minutes they lose their vitamins? Also some veggies are better for you raw. Just a thought.
