Banana Chocolate Chip Baked Oatmeal

Banana Chocolate Chip Baked Oatmeal

-Adapted from Sarah at The Strength of Faith

You’ll need:

-1/2 cup brown sugar

-3 T melted butter

-2 eggs

– 2 cups oatmeal

-1 T baking powder

– 1 cup almond milk

– 1 T vanilla

-1 medium banana, mashed

– ¼ cup semi sweet chocolate chips

First, pre-heat oven to 350 degrees. In a large bowl, combine melted butter, eggs, and brown sugar. Once combined, stir in oatmeal, almond milk, baking powder and vanilla. Lastly, add your mashed banana and chocolate chips. Spread onto a greased pan and bake for 20-25 minutes, until golden brown and cooked all the way through.

Fit Chick Britt Eat Well Tip: Chocolate Chips can be omitted to make for an even healthier breakfast. You can add fresh fruit like blueberries or strawberries, or even nuts. Oatmeal is my favorite fit chick breakfast. It’s quick and convenient, rich in vitamins, minerals, and anti oxidants, and is wonderfully filling. Try this un-conventional approach, baked oatmeal, to change things up a bit.
