30-Minute Meal Monday

It’s Monday, I’d say, the toughest day of the week. You just had a nice weekend, probably full of a combination of running errands, household chores, going out of town, and living in the fantasy land where work doesn’t exist. Then Monday rolls around and you have trouble dragging ourselves out of bed and starting the work week all over again.

You’re extra tired after work and the last thing you want to do is spend hours in the kitchen on dinner. You may be tempted to just book it through the drive through line- but wait! What if I told you I could help you put a delicious, healthy meal on your table in 30 minutes?

Surely it would take you that long to call the kids and figure out what they want (you know the routine, “No cheese, extra pickles, mustard not mayonnaise, cut the onion, oh wait I want cheese, Do they have Dr. pepper?”-UGH) Then, you have to sit in line with the rest of the Monday  crowd and hope pray they get your order right so you can get home in time to watch The Bachelor.

Fit Chick Britt’s 30-Minute Meal Monday: Easy FitChick recipes straight from Britt’s kitchen to yours!

Are you ready for today’s meal?

Shrimp and Mango Curry

Serves 2-3

–          1 T Olive Oil

–          ½ red onion, chopped

–          ½ red bell pepper, chopped

–          1 clove garlic, finely chopped

–          1 T ginger

–          1 T yellow curry powder

–          1 t cumin

–          1 Mango, diced and peeled

–          1/3 cup water

–          1 T Apple Cider Vinegar

–          8 oz. shrimp (pre-cooked)

–          2 T Raisins

–          1/5 cup of half and half

–          1 package 10 minute boil in bag rice (optional)

–          Salt and pepper to taste

Boil a pot of water for rice. Meanwhile, dice onion, garlic, mango, and bell pepper (5 minutes).

Pour tablespoon of olive oil into skillet and add onions and garlic (3 minutes).

Add in bell pepper and half of the mango. Add your spices (cumin, curry, ginger). Let sauté for 3 more minutes.

Pour in water and apple cider vinegar, turning up heat to bring to a boil. Once boiled turn heat down to low for 5 minutes.  

Meanwhile, remove rice from boiling water. Take heated mixture and transfer to a blender, and puree into sauce. Transfer the sauce back to the pan, add remaining mango, raisins, and shrimp. (5 minutes)

Cover the pan and allow sauce cook for 8 minutes.

Stir in the cream, and allow it to sit for another 2 minutes. Serve over a bed of rice and enjoy!

It was a busy busy Monday for me. I didn’t get my 30 day shred workout in like I wanted to (I have seemed to misplaced that DVD- I better find it it’s my favorite!), I worked from 8-5 and immediately after work, I headed to the grocery store with my meal plan and picked up the weekly groceries. After getting home and putting my groceries away, grabbed my yoga mat and headed straight to the gym.

It was a great yoga class. It was almost as if the instructor had read my mind and knew exactly what poses my tight marathon legs needed. We did runners lunges, splits, planks, and many hip opening stretches. I was sweaty by the end.

Fit Chick Britt Fitness Tip: If you’re a runner, yoga is an excellent compliment to your training. It strengthens the core which is very important for runners. For runners, and all yogis, yoga aids in building your strength, flexibility, and endurance.

Breakfast: Banana Chocolate Chip Baked Oatmeal

Snack: Yogurt and a Gala Apple

Lunch: Hamburger Salad- Half of a left over superbowl hamburger patty, on a bed of arugula, topped with bleu cheese crumbles and spicy mustard, served with an orange on the side. Dessert was a York peppermint pattie.

Afternoon Snack: Pretzels
