A Healthy Valentine’s Day Treat

Are you looking for a healthy Valentine’s Day treat for your sweetheart or the kiddos? Well look no further. I’ve got just the treat for you.

These light cupcakes will feed your desire for sweet treats without weighing you down or making you feel guilty.

Ingredients for the frosting:

1 cup plain Greek yogurt

½ cup powdered sugar

1 t vanilla

Combine yogurt, powdered sugar, and vanilla until well mixed. Chill in the refrigerator for at least 30 minutes.

FitChickBritt Eat Well Tip: Greek yogurt is thicker and richer than regular yogurt so when creating a yogurt based frosting Greek yogurt is more appropriate. Typically, Greek yogurt contains lower sugar, more protein and higher amounts of probiotics (aid with digestion).

Ingredients for the cup cakes:

1 cup all purpose flour

½ cup whole wheat flour

2 ripe bananas

1/3 cup granulated sugar

1/3 cup unsweetened applesauce

¼ cup liquid eggs whites (or 2 whole eggs)

½ t baking soda

1/8 teaspoon salt

Yields 12 cupcakes

Preheat oven to 375 degrees. Mash the bananas, add in the vanilla, sugar, egg whites, and applesauce. Mix well until combined. Sift together flour, baking soda, and salt. Slowly stir the wet ingredients into the flour mixture. Stir until combined with no lumps. Bake in a lined muffin pan for 12-15 minutes until tooth pick comes out clean. Allow cupcakes to cool to room temperature before adding the frosting.


6 Fresh or Frozen and thawed Strawberries (cut into halves)

Top each cupcake with yogurt mixture and garnish with a strawberry half.

At about 135 calories a piece these are sure to please not only your sweetheart’s taste buds but your waistline too!
