Breakfast Broccoli Bake

Good Morning! Don’t you just love Sunday mornings? Who doesn’t like the day meant for rest?

Although, I do wish the weather was a bit nicer. We had some great weather this whole week and then the weekend came around and ….

Oh well, it will make it a good day to relax, or shop. I actually went a little crazy and stayed up late cleaning the house so I wouldn’t have to do it all today.

Oh yeah, and I prepped breakfast for this morning as well 🙂

Breakfast Broccoli Bake

This breakfast is sure to please. It’s a quick and easy prep the night before, allowing for a mess-free leisurely morning. All you have to do is pop it in the oven and it’s ready to go. It’d be a great go-to dish for overnight guests, or a nice (and healthy) treat for the kiddos!

You’ll need:

Serves 4

  • 1 T olive oil
  • 1/2 large onion
  • 1/2 cup cilantro
  • 3 pieces whole wheat bread, chopped into small cubes
  • 3 large eggs
  • 3 egg whites
  • 1 cup milk
  • 1 package frozen chopped broccoli, thawed
  • 3/4 cup shredded cheddar
  • 1 t nutmeg
  • 1 t pepper
  • 1/2 teaspoon salt

Heat the oil in a sillet on medium-high heat. Add onion and cook until just beginning to brown.

Spray a baking dish with cooking spray and spread out bread cubes.

In a bowl combines eggs, milk, cheese, onions, cilantro, brocolli, nutmeg, salt and pepper. Mix until incorporated.

Pour over bread, cover with plastic wrap and allow dish to sit over night.

Preheat oven to 350 degrees, bake for 45-50 minutes, or until golden brown.

So I’ve taken the last 2 days completely off of exercise to recoup my knee and it’s feeling a bit better. It’s not quite as tight as before, and it doesn’t hurt to bend. I’m thinking about going to try some cycling today and see how it feels. I’m ready to get on with my 2011 race schedule soon, I’m getting ansy because I have many neat races and events I’m really physched to sign up for. Time shall tell.
