Weekend Recap + 30 Minute Meal Monday: Homemade Macaroni and Vegetables

Was it just me or was this the longest work day ever!? I swear it never wanted to end. Thank goodness we got through it. Only 4 more work days until another glorious weekend, but really, who’s counting?

Did you guys have a good weekend? I sure did!

Saturday, after breakfast and a great workout, Hubby and I headed to his Grandma’s 85th birthday celebration.  It was wild 😉 especially since I had cake!! Jason’s Deli was also served. Mmmm.mmmm.

That night Hubby and I just hung around the apartment; I made sausage and sweet potato fries, and had some wine. Speaking of the wine, I drove myself all the way to the grocery store on Saturday night for two things- limes and wine. After I got to the store… err the checkout line I realized I left my ID at home. Fail. I left with my other groceries with no intention of returning until I realized I didn’t even get limes! How did you go to the grocery store for just limes and wine then come back with rolls, a sweet potato, and mustard? Epic fail. Needless to say, I went back home and grabbed hubby and made him go back in the store for wine and limes. He picked this cute wine out for me 🙂

Anyways, after French toast and church on Sunday I hung out with my bestie. We had made plans to visit some model homes to get some decorating ideas for her new house, but somehow we ended up actually shopping for furniture and décor instead. And shoes. I may or may not have bought some new shoes.

Early in the day we had Starbucks and for lunch we had P.F.-Changs.

Sunday evening, I went on a 4-mile run at the park. It was so so nice outside.  Have I mentioned I am so excited that day light savings is coming soon and I can start running in the day light after work again!! Yippee!

But… on to now… it’s Monday. I’m left with the depressed feeling that the weekend is over and you guessed it, I didn’t feel like whipping up a lavish meal. So, I’ve got a lovely 30-minute Meal Monday treat for you.  Macaroni and Cheese! Simple, quick, and more interesting than the kind Hubby eats now we had as kids.

Macaroni and Vegetables

Serves 2-3

You need:

  • 6 oz. pasta (elbow or penne)
  • 10 oz. mixed vegetables (I used frozen bag of peas, carrots, and corn)
  • 2 T butter
  • 1 t flour
  • 1/2 cup vegetable stock
  • 1/4 milk
  • 1/3 cup grated parmessan cheese
  • 1/3 cup shredded cheddar cheese
  • 1 t basil
  • 1 t pepper
  • 1 t paprika

Boil a pot of water and cook pasta until al dente.

While pasta is cooking, melt 2 T of butter in saucepan. Once melted, remove from heat.

Whisk in stock and milk, continually stiring. Allow mixture to come to a boil and thicken. Reduce heat to low and add both cheeses. Stir until cheese is melted. Remove from heat, add seasonings, and set aside.

Spray a large skillet with non-stick cooking spray and add vegetables. Cook until crisp-tender.

When noodles are cooked, drain well, toss in vegetables and stir in cheese sauce. And your ready to eat!

 

Now that dinner is taken care of the rest of my night will consist of watching The Bachelor while doing a quick 2 mile run on treadmill, hopping on the bike trainer for 20-30 minutes, and completing it with a the 15-minute knee stregnthening circuit I came up with last week. Sounds like a lot but it will be about an hour workout, I find when I’m working out at home I have to change it up a bit or I get to bored and throw in the towel.

    mmm…PF Changs…haven’t had it in ages and now you make me want it!

    I love furniture shopping, by the way – it’s like my favorite thing to do. I only wish I could afford to switch out furniture once a year and/or that I had more rooms to decorate!

    yay for 4 more days to the weekend!

      I find furniture shopping addicting! Ever since I re-did the patio I want to re-do everything else. I found the perfect bedroom set at Z-gallerie. Too bad I don’t have an extra couple grand laying around lol…

    YUM! That pasta looks so delicious! I need to make it especially since it’s so easy and quick to make.
    I love that the sun is staying out longer… that means Summer is on its way ;).
    That’s a great way to squeeze in a workout: while watching T.V.
