Early Morning and Sweet Potato Fries

Good morning! I was up bright and early this morning for a workout (see I can do it when I have to). We’re going to the rodeo tonight so I won’t have time for a workout after work. I headed to the gym for spin class.

Coffee was definitely in order for my early morning, and breakfast shortly after.

Pizza for breakfast!? I had left overs that needed to be eaten and waste not want not. I can’t let good pizza go to waste.

At the request of my cousin (in-law) I wanted to share how I make my sweet potato fries. My new cousin just had a beautiful baby boy in September and she just started a blog about being a new mommy here. I love her, I bet she is the best mom!

So here’s how I make my Sweet Potato fries; I’m sure you can find different variations on the internet but this is what I like.

Sweet Potato Fries

You’ll need:

  • 1/2- 1 sweet potato per person serving
  • salt (I use sea salt)
  • pepper
  • cinnamon
  • olive oil

Preheat oven to 375 degrees.

Cut each potato in half.

Slice potato in horizantal “fry-like” strips. I find it easier to cut bigger strips then cut those strips in half. Get it? Got it? Good!

Spray a large baking sheet with non-stick spray and spread strips out.

Drizzle fries with olive oil, sprinkle salt, pepper, and cinnamon to desired taste.

Bake in oven for 40 minutes, flipping fries halfway through. Then viola!

What a great way to start off Fat Tuesday- with a recipe. Although sweet potatoes are very good for you.

Happy Fat Tuesday! I might have to celebrate with a funnel cake at the rodeo. I am a huge sucker for the funnel cake. Good thing I worked out this morning!

    My mom shipped me a king cake from Rao’s bakery on Cypresswood, it’s SO fabulous! Happy Mardi Gras! Don’t be giving up liquor again this year so we can have ritas next week!

    Oh I’m so jealous, I want some King Cake! lol… not giving up liqour this year but I am giving up meat and wine.

    I love sweet potato fries, love them homemade.

    I’ve never had king cake before. It just doesn’t look tasty to me. But for Fat Tuesday, I’ve had TWO Trenta Green Teas 😉

    So much good stuff! One of our vendors in NOLA sent us a king cake about 3 weeks ago to our office & it was gone by the afternoon! I adore sweet potatoes & really need to find a new way to eat them other than zapping them in teh microwave. That pink knife is so fun? Where did you get it?

    I LOVE sweet potato chips, and butternut ones, but yours look so good! I’ll have to give the cinnamon a go on them.
    Tuesday was Pancake Day for us so I celebrated in style… it would have been rude not to, after all 🙂
    And is that a cake in the bottom picture??!
